In a stand mixer fitted with a paddle attachment, cream the shortening and sugars until light and fluffy.
Add in the molasses, salt, baking soda and spices.
Add the egg and mix until combined.
Slowly add in the flour, and mix until a dough forms.
On a baking sheet lined with parchment paper, roll out the dough to about ⅛ of an inch thick. If it's too sticky, dust with more flour.
Refrigerate for 5 -10 minutes, while the oven is preheating to 375°F.
Cut out the gingerbread men. Remove excess dough from around the cut shapes. Do not try to lift the gingerbread men.
Bake at 375°F for 6-8 minutes. Allow to cool completely before decorating.
Notes
The baking time will vary depending on your oven. Start checking at the 5 minute mark. They will come out slightly soft but harden up once they cool down.
