Antipasto Skewers
These antipasto skewers are the easiest appetizer ever thanks to store bought prepared ingredients and are always a hit!

This is one of those “recipes” that’s not really a recipe. It’s more like a quick way to assemble some store-bought ingredients and make it look like you’ve tried really hard. When you haven’t at all. Lazy for the win.
In all seriousness, though, these antipasto skewers may be incredibly easy and quick to assemble, but they taste delicious. They’re a great appetizer for any sort of party, barbecue or get together. Now I’ve learned to appreciate wine, I like to serve them with a cold glass of rosé.
All antipasto is not created equal. I like to buy good quality ingredients from Whole Foods when I’m making these. You can vary what’s included, based on what’s in stock at your store, but I generally aim to have some olives, tortellini, roasted red peppers, artichokes, mozzarella and some sort of salami type meat.
Usually, Whole Foods has a prepared tortellini salad that has most of the ingredients I need, and then I just supplement with some marinated olives and roasted red peppers from a jar.
Slide everything on a skewer and serve on a bright white plate so that the colors really pop. Easy peasy! Looks impressive right?
Other things you could add would be basil or fresh spinach leaves (for some extra color), cherry tomatoes or even a drizzle of balsamic vinegar.
